Greek Quinoa Salad



Since the New Year I've been trying to eat as healthy as possible, but it has been some what of a struggle due to the fact that I got sick two times in the month of January. That is definitely not normal for me and has thrown me off any type of routine. Now that Valentine's Day has come and gone, I'm really focusing on eating just what is good for my body and getting back into my running routine. This lady has got to get into shape for her 30th birthday this summer!

I discovered my love for quinoa last year and now my husband and I make it on the regular. It's versatile and can be added to so many things. The Greek quinoa salad has got to be my favorite way to make it so far. This is a great recipe found here by Bobby Flay. Super simple and delicious; just the way I like it! I usually make a big batch and we have enough to eat all week long, as a side dish with dinner and for lunches. I hope you all have a fun-filled weekend and try out this recipe.
