Roasted Butternut Squash

I have been on the healthy eating train for a while now, but finding new and delicious recipes can be somewhat time consuming, so I'm always excited when an old favorite resurfaces. I went to the grocery store earlier this week in search of spaghetti squash to try out as an alternative to pasta, however due to misplacement of all of the squashes (and my ignorance), I came home with a butternut squash instead. I was a little bummed, but immediately became determined to make something out of it.

After scouring Pinterest for a bit, I decided simply on roasting it with coconut oil and salt. Easy and delicious, just the way I like it! The only difficult part was cutting the squash in half, which took a little finesse. I also peeled the outside with a potato peeler and chopped up in squares before tossing with oil and salt. Bake in the oven at 375-400 (depending on your oven) on a cookie sheet with parchment paper for about 25 minutes and you have a delicious, healthy addition to dinner. It would also be tasty with some nutmeg, cinnamon and allspice added to bring out the sweetness.

I know I'll be adding these guys to my go-to recipes, even if I have to cheat a bit and buy the pre-cut version. What are your simple, healthy recipes that you can't live without?
